Ingredients
  • 2 cups all-purpose flour
  • 4 eggs, lightly beaten
  • 1/3 cup milk
  • 2 tsp. salt
  • 1 tbsp butter
  • 2 tbsp. fresh parsely, chopped (optional)
  • water for boiling

Directions
  1. Stir the flour, eggs, milk and salt in a bowl until smooth (dough will be sticky).
  2. In a lg. sacepan bring water to a boil. Making these is really a lot easier with a spaetzel maker (can be purchased for $15 online). If you don't have one, use a colander with large holes. Pour dough into a colander or spaetzel maker coated with non-stick cooking spray; place over boiling water.
  3. With a wooden spoon press dough until pieces drop into boiling water. Take care, as the steam will be hot.
  4. Cook for 2 min, or until dumplings float to the top. Remove with a slotted spoon. You can do this in batches. A really easy way is to put the dough into a ziplock, cut off a tiny corner and squeeze the noodles into the boiling water. They will in that case come out bigger and will need to be chopped when pulled out. The noodles on the picture were made using a colander with large holes.
  5. Toss the cooked noodles with butter and toast lightly in a non-stick skillet.
  6. Garnish with chopped parsely and serve with sausages, potato pancakes and sweet and sour red cabbage, or with any other meats and veggies.

Can I use a potato ricer to squeeze out the spatzel dough over the boiling water?


Potato ricer is a great idea. I'm sure anything will work, as long as it helps push the dough through in small pieces.

I went on line and found a spaetzle maker at bed bath and beyond for $6.95. shipping is 6 something. I am a tight a-- and didn't want o spend on the shipping so I went to the store. They only sell it on line. My neighbor gave me the lid to he colander and my husband drilled bigger holes for me. I haven't used it yet ( already made spaetzle with deep fryer basket, didn't work too well.) OMG! I Just now thought of something I could use instead. I have a Big hole strainer that sits on edge of pot to drain potatoes or veggies. Crazy. I'll get back to you on that one. lol. The potato ricer didn't work too well for me either


The spaetzel doesn't look like noodles in the end. The noodles have irregular shape and are more like little balls. When you buy them prepackaged, they look like long noodles, but German restaurants actually serve them the way they come out home-made.


This sounds like it would be great with Beef Stroganoff!

I learned to make these during my exchange year in Munich. So tender and delectable. I actually own a spaetzle maker, but it makes them too small and they tend to dissolve--will have to try the colander method. btw, who's yer friend, in your avatar?
