TONS OF TOMATOES!

    So I have a major overload/excess/mountain of both regular and cherry tomatoes and it's at the point I'm battling the fruit flies over their domination. I know a lot of you have some awesome tomato recipes. Please refresh my memory or share new favourite ones I may not have seen before. I need to do something fast! :) Recipe Links much appreciated!

    I don't have that many this year but in the past I've just blanched, removed the skin and froze them. I leave whole as I don't know what I will need them for later.

    Last year I read that you can just freeze a tomato whole without blanching so I did. I do find the skin is tough when you go to use it after though, so indeed I think blanching and removing the skin is the way to go. Thanks!

    I am in the same dilemma and have been blanching and freezing them also. Just an easy tip for removing the skin. Cut the top off the tomato and score the other end like a star and the skin just about slides off by itself. Make lots of tomato soup and sauces and that is about it, barring going into the tedious process of making jams and things.

    that maybe I could use in that. Also LOVE that Tomato Crumble recipe. Nice and easy but looks super flavourful. The bulger stuffed tomatoes are lovely.
    Thank you for reminding me about that Confit tomato recipe Joce. I, like you, have a ton of cherry tomatoes. And the vodka infused recipe is so cool. "The Realistic Housewife". LOL! Some people think of everything Honest to Goodness! :)

    I just typed in tomato and some of these I am going to try for sure. I have a ton more of cherry tomatoes which are still growing and beefsteaks are starting to come out my ears! Plus a bunch of other varieties. Sometimes I just get tomatoed out!

    I blanch them until the skin is easy to peel, let cool, put in plastic containers, freeze them, then I take the tomatoes out of the plastic containers and use my Foodsaver to get an airtight seal..they last quite a while and there's no canning involved:)
