I was going through some of the old posts looking for something when I noticed we had a whole bunch of reviews for biscuits (mostly from PointSevenOut) and thought I’d link them all together for all of you. Now I did not get through all 282 pages, just about 40 or so. These were the ones that had “biscuit” in the title so I may have missed some. So like the Soup & Soup 2 threads, here’s one for biscuits. Hope it helps someone and please feel free to add more links.

Thanks for doing this. I've been lackadaisical about starting a biscuit string, PLUS I've been told to lay off the biscuits because of all of the fat and carbohydrates in them. But everybody keep posting your tried biscuit recipes here and make it as much of a success as the soup strings.

Overall a tender biscuit but I think it has just too much shortening in it. There are too many good tasting and rise result biscuits in this thread and in the group that have half the shortening in the recipe.

Looks like it could be OK, although the destructions says to cut in the butter but the ingredient list says to use shortening. I like that the author places the biscuits side by each to control any lateral spread and help raise straight up. I use a little cornmeal sprinkled on a baking sheet instead of greasing the sheet. It keeps the biscuits from sticking and any grease doesn't bake onto the sheet causing a tougher clean up. The one inch thick cut out should rise to two inches minimum for a nice fluffy biscuit. So use a 3" cutter.
If you're concerned about the butter shortening mix up, do half and half butter to shortening and you will get the flavor from the butter and tenderness from the shortening.
The addition of the baking soda (base) to balance the buttermilk (acid) is a good thing and should provide good rise along with the requisite baking powder.
Might could double up on the salt. But try it first.

If you're one of them'uns that use self-rising flour you may use it and omit the baking powder and salt additions. It's 1 1/2 tsp baking powder and 1/2 tsp salt per cup of all-purpose flour to make self-rising flour.
I like using half all-purpose flour and half cake flour to make what's called pastry flour. It makes the biscuits lighter and one can knead a few more than a couple of times to bring the dough ball together and not worry about getting a tough biscuit because of the reduced gluten level in cake flour.

Made these again to get them into this string and because I had a couple cups of heavy cream to deal with soon. They do rise up very well to at least doubled the dough cut-out height. Put the biscuits in the baking tray touching each other to keep them rising straight up. Ten minutes is the minimum bake time. Let them go one to two more minutes more for a nice golden brown.

P7O sorry I missed your response to my earlier question and thank you for your detailed answer. I usually use all purpose flour so it's good and just was given a biscuit cutter too. It's plastic and I think I'd prefer metal, but it was a gift and I'll try it out. Thanks again.

It's a good sourdough biscuit. Nice tang. Didn't have to add any extra water or flour. Also didn't do the 30 minute wait time as I think it is unnecessary. There is nothing in the biscuit dough that will do any raising in that time. Maybe there's something in the Alaska sourdough that reacts that way but not here in Alabama. Went right to the oven and got good oven spring. These were a proud recipient of a ladle of gravy.
My pic does not look exactly like the authors. Took 20 minutes to bake to a nice golden color. Made 14 biscuits with a 3" cutter. Used cornmeal on the baking sheet instead of grease. Posted pic on recipe page.

It does use more starter than most recipes. Usually a recipe uses one cup or less of starter. I'm mostly puzzled about the 30 minute wait time.
